Smokey, sweet and nutty, the spice combination brings out the best in these roasted veggies.

Ingredients
1 Acorn Squash
1 large Sweet Potato
1/2 teaspoon Smoked Paprika
1/2 teaspoon Cinnamon
10 Sprigs Fresh Thyme (remove stems)
or 1 teaspoon dried Thyme
1 Tablespoon Coconut, Olive
or Avocado Oil
Salt to taste

 

Method
1. Preheat the oven to 400 degrees F.
2. Line two baking trays with parchment paper.
3. Cut the squash and sweet potatoes once vertically then into smaller horizontal slices.
4. Mix together the paprika, cinnamon, thyme and oil in a large bowl. 
5. Add the veggies to the same bowl and coat evenly in spice mixture. Alternatively, brush the spice mix directly onto the veggies spread on the baking tray.
6. Bake for 40 minutes or until soft.
