I make this nearly every week—it's an excellent quick, nourishing staple. Makes me feel warm and calm. 

Ingredients

1 1/2 cup Red Lentils, rinsed
1 - 2 Sweet Potatoes, peeled & cubed 
1 Onion or 2 Shallots, diced
2 Garlic cloves, minced
Optional: Knob of Ginger, grated
1 can Coconut Milk, full fat
2 teaspoons Curry Powder
+ any spices on hand, I like:
1 tsp Cumin
1/2 tsp Turmeric
1/2 tsp Coriander
Water or carton of Vegetable Broth 
Salt & Pepper or Chili Flakes
Optional: throw in a bunch of Greens!

 

Method

Sauté onion in olive or coconut oil until fragrant. Add garlic, ginger and spices. Add the rest of the ingredients, bring to a boil, and simmer covered for 30-40 mins until cooked.
