A magical combination of creamy tahini, thyme, basil, garlic and mushrooms with a pop of lemon zest. Quick and delicious!

Ingredients

2 tablespoons Olive Oil

1 Red Onion, minced

4 Garlic Cloves, minced

1 tablespoon Coconut Aminos 

1 teaspoon dried Thyme

1 teaspoon dried Basil

Chili flakes to taste

3 cups Mushrooms, chopped*

3 packed cups Kale or Spinach

1/3 cup Tahini

1 tablespoon Lemon’s juice

1/2 teaspoon Lemon Zest  

Salt and Pepper to taste

1/2 box Pasta of choice/2 servings, I prefer Chickpea

 

*Maitake, Oyster, Cremini or Shiitake

 

Method

Prep ingredients. Heat oil in medium saucepan, sauté onion until fragrant. Add garlic, thyme, basil, chili flakes and coconut aminos. Sauté for 1-2 minutes. Season with salt & pepper. Add mushrooms, cook until soft, then add greens until wilted. 

Boil salted water for pasta, and cook pasta. Add 1/3 cup pasta water to mushroom mix along with 1/3 cup tahini, lemon and lemon zest. Once pasta is cooked, mix together with the rest of the ingredients and serve!
